Everyone’s favorite cookie – The Monster Cookie. A meal in itself. Last time I made them I had about 42 cookies. You may need two hands to eat them.
Monster Cookie Recipe
Ingredients
- 32 oz Peanut Butter
- 1 cup Butter, room temperature
- 3 cups Brown Sugar
- 1 cup Sugar
- 6 Eggs
- 2 tsp Vanilla
- 9 cups Old Fashioned Oats
- 4 tsp Baking Soda
- 2 cup Chocolate Chips
- 2 cups M&M’s
Instructions
Preheat Oven to 350° and line 2 cookie sheets with parchment
Combine peanut butter, butter, brown sugar, and granulated sugar, vanilla in a mixer until smooth.
Add eggs and stir until combined.
Add half the oats and baking soda and stir.
Get a big bowl out and stir in the rest of the oats. There’s not enough room in my mixing bowl for everything so I stir in the rest. Make sure to use a strong spoon!
Mix in the chocolate chips and M&M’s until everything is combined.
Use an ice cream scoop to portion out your cookies. I have big pans and can fit 6 cookies on a pan. Smaller sheets you may want to try 2 at first. Once I have scooped the cookies out on the parchment I use the back of my 1 cup measuring cup to flatten the cookie so it’s not mounded to about a 1/4 of an inch. Just a good tap will do.
Bake for 18 minutes or until golden brown. Remove from oven and let them cool on the tray for about 5 minutes then transfer to your cooling rack. It helps the cookies to stay together and not break.
When I worked at American Locker in the early 2000s one of my coworkers brought these cookies into the office once a year. This isn’t her exact recipe since I’ve lost that moons ago. It’s a bit pricey because they’re so big and they take some strength to stir the cookies by hand. They are monsters!
I made them for the Bills playoffs this year with red and blue M&Ms. I’m testing a new combination out that may be a bit more healthier but not too much. You can cut this recipe in half but here’s my rule of thumb if I’m going to the trouble of making these big monsters I might as well share. They make great gifts and put a smile on everyone’s face.
